Show controlling by MIDI controller is not supported yet, but ArtNET supports it in window “special commands” as you noticed.
However last version of Fiesta (1.0.85) supports controlling show by MIDI time code, it’s not the same what you need but if you have MIDI time code generator then you can use for play / stop show and also play from selected time (for example: with delay 5 minutes).
However we are planning insert feature “special commands” for MIDI in next release version, which will contains same options like for ArtNET.
Just select Invert X for phase of text:
1, by double click on text open graph window
2, select phase
3, by right mouse button down open the context menu
4, select Invert X
Phase is plot that control speed and direction of moving text.
Today a new version has just been released, that supports mouse wheel to change value by one unit for all sliders (for example: scan rate in Hardware settings, size in laser settings).

Current version 1.0.81 doesn’t support set scan rate precisely, but we are finishing new version, that contains this feature, where you can increase/decrease scanrate by one unit by scrolling mouse wheel.
New version’ll be released this week.
We know this bug (look “Timeline known bugs” in blog https://www.showtacle.com/new-fiesta-for-mac-1-0-81-released/).
We are now working on fix it, we will release version with fix it at end of this year.
If you need urgently write arabic text now before new version released, you can temporary draw manually it in editor, where you can use background as image that contains your arabic text and you can draw outlines from image.
